Bird Brain is the poultry rub you've been chasing: tangy, sweet, with just enough heat to keep things interesting and still keep the chilli-dodgers at the table. There's a lot going on — and the clever bit is that it all pulls together instead of fighting.
The flavour
Tang up front, a sweet middle, then a gentle warmth that stays tolerable even for the heat-shy — Bulldozer tested it on the real chilli-dodgers to be sure. It all lands on a pleasant little lift of Australian native lemon myrtle to finish, bright and citrusy, the note that ties the whole thing off.
How to cook with it
- Coat a whole chook or Marylands before roasting or smoking
- Season wings, drumsticks and turkey
- Rub into pork or lamb for a change of pace
- Dial the heat with the included Chilli Sidekick packet
In the shaker
A complex, aromatic poultry blend — tangy and sweet with a manageable warmth and a citrusy lemon-myrtle lift on the finish. A separate Chilli Sidekick chilli packet tucks inside so you can push the heat as far as you like.

DUE TO ACCIDENTAL ORDER OR CHANGE OF MINDWe offer refunds and/or exchanges, providing a request for return is received within 30 days of your order being delivered. Your item must be in its original packaging and in the same condition that you received it.
The return shipping costs will be the responsibility of you, the customer. For domestic orders (AUS & USA) a prepaid shipping label can be provided, with the associated costs being deducted from the refunded amount. International (Asia) returns will need to be arranged by the customer, and will require a tracking number.
Any refund or exchange will only be issued once the original item has been shipped back to us.
DUE TO DEFECTIVE OR DAMAGED ITEM
In the unlikely event you receive a defective or damaged item, we offer you the choice of a full refund or a replacement. We will cover all return shipping costs.
Please report any issue within 5 days of receiving your item. We kindly ask that you provide clear evidence of the fault or damage, so we can expedite your request efficiently.
