The flavour

Sharp vinegar and whole mustard seed lead the charge, with fresh tomato smoothing things into a tangy, savoury base. Fresh Scotch Bonnet chilli brings genuine medium heat with a fruity edge, gluten-free soy sauce adds a deep umami backbone, and fresh garlic, onion, nutmeg and white pepper round it out into something far more complex than your average burger sauce.
