Rosella is the flower that put Aussie chutney on the map — tart, jammy and floral, slow-cooked down with sugar and spice until it's thick enough to hold its own on a cheese board. Mild heat, big old-school flavour.
Perfect on: a cheese platter, cold meats, a bacon-and-egg roll, or stirred through a curry for a tangy lift.
In the jar: deep ruby-red, thick and glossy, with soft flecks of rosella petal throughout. Heat: mild — sweet-tart, no chilli burn.
