The Rub Smuggler's Verdict
🏴☠️ Darryl's Secret: Sticky Habanero Wings
Sweet, then sneaky. Just like a good smuggler.
You'll need: 1kg chicken wings, tips removed; 2 tbsp chicken rub; ½ cup Habanero BBQ Sauce; 1 tbsp butter, melted.
Do this:
- Pat the wings dry, toss in the rub and cook indirect at 180°C for 40–45 minutes until crisp and 75°C.
- Warm the sauce with the melted butter in a small pan.
- Toss the wings in the sauce and put them back on the grill for 5 minutes so the glaze sets.
Why it works: A splash of butter softens the heat and gives the glaze a glossy finish.
