Chris Marks of Three Little Pigs BBQ is the most successful pitmaster in American Royal history — 8 Grand Championships, plus a Jack Daniel's World Championship. This Kansas City Championship Rub is his flagship: an excellent balance of sweet and spicy that's been winning silverware for over 30 years.

The flavour

Classic KC balance — sweetness up front, a savoury middle and a gentle spicy finish. It's the kind of rub that improves everything it lands on without ever taking over.

How to cook with it

  • Pork ribs and pulled pork, comp style
  • Chicken, beef and anything on the smoker
  • Roast veg and baked potatoes
  • Stirred through soups and chilli for a flavour boost — the brand's own tip

In the jar

A classic red-brown Kansas City blend in a generous 354g jar — a workhorse rub that earns its bench space daily.

Ingredients & Dietary

Ingredients: Salt, dehydrated garlic, onion and bell pepper, monosodium glutamate, paprika, sugar, spices, natural hickory smoke flavour (from the brand's label).

Dietary: Gluten free (as stated by the brand). Contains MSG (listed ingredient) — always check the physical label.

Eight American Royal titles. Eight. I've moved a lot of precious cargo, but this jar might be the most decorated thing I've ever carried. Start with ribs, smoke them over Western Hickory Smoking Wood Chips, and present the tray like you've done it all your life. The whole Three Little Pigs stash is in the back room. For a fruity finish, glaze the ribs with Four Monkeys Cherry Apple Jalapeño Rib Glaze in the last fifteen minutes.

🏴‍☠️ Darryl's Secret: KC Comp-Style Pork Ribs

Turn in a box that'd make a judge sit up.

You'll need: 2 racks pork spare ribs; 2 tbsp yellow mustard; ⅓ cup KC Championship Rub; ½ cup apple juice in a spray bottle.

Do this:

  1. Smear the ribs with mustard and coat evenly with KC Championship Rub.
  2. Smoke at 120°C for 2 hours, then spritz with apple juice every 45 minutes.
  3. Cook a further 3–4 hours until the rack bends and cracks when lifted (around 93°C between the bones).
  4. Rest 15 minutes and slice.
