A restaurant sauce in three minutes flat.
You'll need: 2 tbsp Damson Fruit Paste; ¼ cup red wine or stock; A knob of butter.
Do this:
- After searing duck breast, pour off most of the fat.
- Add the paste and wine, and simmer 2–3 minutes until glossy.
- Swirl in the butter and spoon over the sliced duck.
