Off the record, Darryl says quince and pork are an old Spanish romance. Rub a rolled pork belly with Street BBQ Tuscan Alle Brace Rub, roast it low, then crank the heat to crackle the skin, and brush on a thin coat of Four Saucemen Spiced Rum Rib Glaze. Serve the slices with batons of Quince and a wedge of manchego.

A two-ingredient glaze that tastes like a restaurant.

You'll need: 2 tbsp Quince Fruit Paste; 1 tbsp water; 1 tsp Dijon mustard; Pork chops.

Do this:

  1. Melt the paste, water and mustard together in a small pan.
  2. Brush over the chops in the last 2 minutes on the grill.
