🏴‍☠️ Darryl's Secret: Scorpion Sting Wings

Smoked, crisped, then thrown in the deep end.

You'll need: 1kg chicken wings, jointed; 1 tbsp baking powder; 1 tsp salt; 3 tbsp Scorpion Wing; 2 tbsp melted butter.

Do this:

  1. Pat the wings dry and toss with baking powder and salt.
  2. Smoke at 135°C for 45 minutes.
  3. Move to a hot grill or a 220°C oven for 10–15 minutes until crisp and 75°C inside.
  4. Toss in the Scorpion Wing mixed with melted butter and serve straight away.

Why it works: Baking powder dries the skin so it crisps instead of going rubbery.
