COAST N SMOKE: Winki-POP Dust Seasoning Rub – 170g

The all-rounder that earns its shelf

Named for the Winki Pop break off Bells Beach, this is the one seasoning that does the lot. It's the jar you grab when you can't be bothered choosing — wings, chops, prawns, spuds, all handled. It even made finalist in the Australian Barbecue Rub Awards (Chicken) two years running, so it's not just us who reckon it's the ultimate utility player.

The flavour

A gentle sweetness from brown and raw sugar meets smoky ancho and chipotle, with thyme and oregano lifting it herby and bright. Cumin and paprika round it out — spice you notice but never heat that shouts.

How to cook with it

• Dust chicken wings heavy and grill hot until the skin blisters and crisps.
• Rub pork chops or a shoulder before a low, slow smoke.
• Season firm white fish or prawns just before they hit the pan.
• Toss it over roast cauliflower or baked potatoes for a smoky, herby lift.

In the shaker

A warm reddish-brown medium grind, herb-flecked, with a smoky-sweet aroma. Free-running and easy to shake, it colours up nicely on a hot cook.
