Two Meat Church legends, one shaker

The Holy Gospel splits the difference between Meat Church's two biggest names — the peppery, brisket-built Holy Cow and the balanced, do-anything Gospel. The result carries beef-grade backbone but stays friendly enough for a Tuesday-night steak or a rack of ribs, without ever asking you to choose between the two.

The flavour

Coarse black pepper and savoury salt from the Holy Cow side lead the way, softened by The Gospel's rounder paprika-and-garlic sweetness underneath. The finish is warm rather than sweet — bold on beef, but never so aggressive it can't handle chicken or pork.

How to cook with it

  • Coat a brisket or a rack of short ribs the night before for a deep, peppery bark with a touch more roundness than straight Holy Cow.
  • Season a tomahawk or a tri-tip generously before the reverse sear — it builds a crust without turning sweet under high heat.
  • Use it on pork chops or a whole chicken when you want more backbone than an all-purpose rub but less punch than a straight beef blend.
  • Rogue move: rim the edge of a burger patty with it before it hits the grill for a peppery, steakhouse-style crust.

In the shaker

A warm, medium-coarse rub with visible cracked pepper running through a terracotta base. It builds a deep, savoury bark that leans beef but never looks one-note.
