Raspberry Jam for People Who Like a Bit of Bite
This one doesn't hide behind sweetness — raspberry leads the whole way through, with lemon juice sharpening rather than softening the tartness that makes raspberry jam worth having in the first place.
Perfect on: Toast, a classic Victoria sponge, or stirred through natural yoghurt for something with a bit more character than the usual berry mix.
Crimson-red with plenty of raspberry seed and pulp through it. Sweet base with a genuinely tart-forward finish — this isn't a jam that plays it safe.
