The flavour

Sugar leads the charge, warm and rounded, before spice and paprika roll in for a gentle heat. There's a tangy lift in there too — amchur (dried mango) doing quiet, fruity work — and a savoury base of dehydrated veg and hydrolysed protein holding it all together. Sweet up front, spiced in the middle, moreish on the finish.

How to cook with it

• Dust chicken thighs or wings and grill — the sugar caramelises into a sticky edge
• Rub pork loin or chops before a low roast for a sweet, spiced crust
• Season a firm whitefish fillet and pan-fry hot and fast
• Sprinkle over grilled corn or sweet potato wedges
