Sweet smoke on fish. Don't knock it till you've nicked it.

You'll need: 4 salmon fillets, skin on; 2 tsp Smoked Maple Garlic per fillet; 1 tbsp oil.

Do this:

1. Pat the salmon dry, brush with oil and dust the flesh with Smoked Maple Garlic.
2. Cook skin-side down on a medium-hot grill or in a 200°C oven for 10–12 minutes, until it just flakes (about 50–55°C in the centre).
3. Rest 2 minutes and serve with a squeeze of lemon.

Why it works: Medium heat lets the sugar and maple caramelise without scorching.
