The flavour

How to cook with it

• Use it as the base layer under a second, more specific rub when you want extra depth on a big cut like brisket or pork shoulder.
• Season a whole chook inside and out before it goes on the rotisserie or into the smoker for an easy, all-purpose crust.
• Dust it over grilled prawns or a whole fish just before they come off the heat — light enough not to overpower seafood.
• Rogue move: season roast potatoes or a tray of veg with it — the garlic and paprika turn a side dish into the thing people ask about.
