Gold Rush is a double garlic butter BBQ rub and seasoning from Canberra's Outlaw Barbecue, built for chicken, pork, seafood, potatoes and veg. It's the garlic butter hit in the brand's four-blend line-up — born from a 2013 trip through Texas and Memphis and refined on local barbecue fans before launch. Double garlic, real butter powder and a whack of umami, built to give whatever you're cooking a golden, savoury crust.

The flavour

Salty, savoury and rich. Garlic leads twice over, butter powder rounds it out, onion fills the middle and thyme and oregano give it a herby, garlic-bread finish. Pepper adds a gentle bite, and the umami makes chicken and spuds taste like they've been basted in butter the whole cook.

How to cook with it

• Rub chicken thighs, wings or a whole spatchcock and roast or grill until golden.
• Season pork chops or ribs before cooking, then shake over a little more when they come off.
• Toss prawns or fish fillets in oil and Gold Rush and cook hot and fast.
• Roast potatoes, corn on the cob or mushrooms with a heavy shake.
• Rogue move: shake it over hot popcorn or straight onto buttered toast.

A pale, golden blend with visible dried herbs. It's salt-forward and dissolves into a buttery coating once it hits a little oil or fat.
