Outlaw Barbecue

Bold flavour. No apologies.

Outlaw Barbecue is a Canberra-based rub brand with four blends and one attitude: bold flavour, no apologies.

It started in 2013 on a trip through Texas and Memphis, Tennessee, where the founder got hooked on the barbecue culture first-hand. Outlaw Barbecue took shape in 2023, and through 2025 each blend was refined and put in the hands of local barbecue cooks for honest feedback before launch.

The range covers the lot: Bushranger A.P.R. is the all-purpose shaker for just about anything, Gold Rush brings double garlic and butter for chicken, seafood and spuds, Lawless is zesty lime and cracked pepper for chicken, pork and seafood, and Stockman CRUST is an espresso beef rub built for a deep bark on brisket and steak.

None of them relies on chilli — the kick is black pepper and big savoury flavour, with the whole range sitting at 0–1 on our Sting Gauge. All four are blended and packed in Australia, and you can grab the whole gang together in The Outlaw Collection four pack.
