Hardcore Carnivore is Jess Pryles' seasoning line — a Melbourne-raised, self-taught meat nerd who fell hard for live-fire cooking on a trip to Texas and simply never came home, building her name and her smokers out of Austin ever since.

The range has grown well past a rub and a shaker: 16 products now cover rubs, finishing sauces, compound-butter mixes and even a pair of high-heat gloves — everything needed to season, sauce and handle a proper cook from go to whoa, across beef, pork, chicken and game.

Black leads the shelf — a jet-black, activated-charcoal beef rub built to throw a proper bark on brisket, steak and beef ribs without ever burying the meat underneath — right alongside fellow best-sellers Red (the everyday all-rounder), Burnt Ends Sauce for mopping ribs and brisket late, Sweet BBQ for a glossy pork crust, and Chilli Lime Meatchelada for wings and tacos with a citrus kick. Round it out with the Cowboy Butter and Hot Honey Butter mixes for a proper melted steakhouse finish, and the newly arrived Steak Master Seasoning and Poultry Rub, both available to preorder now.

Every core blend is gluten free and MSG free, and nearly all of it is made in Texas — bar one genuine curveball. MeatyMite, the umami all-purpose rub, is manufactured exclusively in Australia, a cheeky nod back to where Jess actually started.
