🏴☠️ Darryl's Secret: Dirty Bird Buttermilk Thighs
Crunchy, juicy fried chicken without a deep fryer in sight.
You'll need: 1kg boneless chicken thighs; 2 cups buttermilk; ½ cup Rum and Que Dirty Bird seasoning mixed with 1 cup plain flour; Vegetable oil for shallow frying.
Do this:
- Soak the thighs in buttermilk in the fridge for at least 2 hours.
- Lift out, let the excess drip off, and dredge firmly in the seasoned flour. Rest 10 minutes so the coating sets.
- Shallow-fry in 2–3cm of oil at 170°C for 5–7 minutes a side until deep golden and the centre reads 75°C.
- Drain on a rack and serve while it still crackles.

We ship across Australia and to New Zealand. Shipping within Australia is a flat rate of $10 AUD, with the option to upgrade to Express at checkout. Orders to New Zealand are calculated by weight and shown at checkout. Orders are processed within 24 hours and typically shipped the next business day.
