🏴☠️ Darryl's Secret: Cherry Apple Pork Belly Bites
Candy-coloured, sticky and very hard to stop.
You'll need: 1.5kg skinless pork belly, cut into 4cm cubes; 1 tbsp mustard; 3 tbsp Republic Cherry Apple Rub; 60g butter; 3 tbsp honey.
Do this:
- Toss the pork in the mustard and rub, then refrigerate overnight.
- Smoke at 125°C for 3 hours, until well coloured.
- Tip into a tray with the butter and honey, cover with foil and cook another 1 to 1½ hours, until about 93°C and tender.
- Uncover for 10 minutes to let the glaze set.
