🏴☠️ Darryl's Secret: Mediterranean Lamb Meatballs
Little flavour bombs with a Mediterranean passport.
You'll need: 500g lamb mince; 1 egg; ½ cup breadcrumbs; 1½ tbsp Mediterranean Magic; 1 tbsp olive oil.
Do this:
- Mix the mince, egg, breadcrumbs and rub with your hands until just combined.
- Roll into about 20 walnut-sized balls and brush with oil.
- Grill or pan-fry over medium heat for 10–12 minutes, turning often, until browned and 71°C in the centre.
Why it works: The sugar and herbs in the rub caramelise on the outside while the meatball stays juicy.
