The Outdoor Cook is America's Test Kitchen's 352-page guide to cooking whole meals outside, with more than 150 tested recipes for gas and charcoal grills, flat-top griddles, fire pits, smokers and pizza ovens. It also teaches fire set-ups and heat levels and reviews the gear, so you can convert many recipes from one cooker to another.

Tested until it can't go wrong

America's Test Kitchen is famous for cooking a recipe over and over until it works every time, and this book brings that discipline outdoors. It goes well beyond burgers, drawing on more than 25 years of the team's outdoor cooking to cover snacks, sides, breads and desserts as well as the mains.

What's inside

The front section explains fire set-ups and heat levels and reviews the equipment: grills, griddles, planchas, rotisseries, pizza ovens and smokers. The recipes are then grouped by occasion, including Snacks and Small Plates, Both Hands Needed, Weeknight Dinners, Weekend Gatherings, Over an Open Fire, Grilled Breads and Desserts.

Highlights named by the publisher include Smoked Loaded Nachos, Grilled Oysters with Soy-Citrus Sauce, Grilled Smokehouse Barbecue Burgers, Kansas City-Style Barbecue Ribs, a New England Clambake, Paella for a Crowd, Thin-Crust Grilled Pizza and Glazed Rotisserie Pineapple with Salted Rum Butterscotch Sauce.

Who it's for

New outdoor cooks who want recipes that just work, campers and caravanners cooking over a fire pit, and anyone who's just bought a griddle or pizza oven and wants more out of it. Experienced cooks will value the gear reviews and conversion notes.

About America's Test Kitchen

America's Test Kitchen is a Boston-based team of more than 60 test cooks behind the Cook's Illustrated and Cook's Country brands, long-running public television shows and a large library of cookbooks. Every recipe is tested repeatedly before it's published.

The Rub Smuggler's Verdict

Darryl Rubb, The Rub Smuggler

Darryl's orders: if you own more than one way to light a fire, this is your manual. My favourite bit is how the team shows you to switch a recipe between grill, griddle and fire pit, so one book covers the whole backyard and the campsite. Trust me, buy it and stop guessing. Keep The MeatEater Outdoor Cookbook handy for the bush cooks and The New Camp Book for the camp set-up. Pack Republic The General as your do-everything rub. Keep your fire low and your standards high.

🏴‍☠️ Darryl's Secret: Campfire Banana Boats

Dessert with no plates, no pans and no evidence.

You'll need: Bananas (skin on), a few squares of dark chocolate, mini marshmallows, foil

Do this:

  1. Slit each banana lengthways through the top skin, leaving the bottom skin intact, and open it up a little.
  2. Stuff with chocolate and marshmallows, then wrap tightly in foil.
  3. Nestle into medium coals for 5 to 8 minutes until gooey, then eat with a spoon straight from the skin.

Why it works: The banana skin acts as its own little pot, steaming the fruit while the chocolate and marshmallow melt.
