The Rub Smuggler's Verdict

Darryl Rubb, The Rub Smuggler

The whole hold, every month. Eight to ten pieces, the allocated stuff, and a wildcard to keep it interesting. This is the crate for the long cooks: Meat Church Holy Cow on a full packer brisket, a glossy splash of The Feedlot Barnyard Brew on the burnt ends, and Hardcore Carnivore High Heat Gloves to handle it. Top of the manifest.

🏴‍☠️ Darryl's Secret: The Kingpin Packer Brisket

The cook that earns the biggest crate.

You'll need: 1 whole packer brisket, 5–7kg, trimmed to 6mm fat; 4–5 tbsp of the crate's beef rub; pink butcher paper; 200ml beef stock in a spray bottle.

Do this:

  1. Season the brisket all over the night before and leave it uncovered in the fridge.
  2. Smoke fat-side up at 120°C for 7–9 hours, spritzing every hour once the bark sets, until it reads about 70°C and the bark won't smear.
  3. Wrap tight in butcher paper and keep cooking until it probes like soft butter, around 95°C — usually another 3–5 hours.
  4. Rest wrapped in a dry esky for at least 2 hours. Slice the flat across the grain and cube the point for burnt ends.
