This is where the serious cooks sit. Six or seven pieces, a limited drop and a condiment you'll hide from the household. Think Meat Church The Gospel on pork belly burnt ends, finished with BLEND Blazed Smoked Chilli Honey and a spoon of Proud Phoenix Honey Chilli Crisp on the side. Enough range to cook a month without repeating a plate.

🏴‍☠️ Darryl's Secret: Quartermaster's Hot-Honey Belly Bites

Pork belly burnt ends built around the crate's guarded condiment.

You'll need: 1.5kg skinless pork belly, cut into 4cm cubes; 3 tbsp of the crate's all-purpose rub; 3 tbsp of the crate's hot honey or chilli oil; 60g butter, cubed; ¼ cup of the crate's BBQ sauce.

Do this:

  1. Toss the cubes in rub and smoke on a rack at 120°C for about 2½–3 hours until they're deep mahogany.
  2. Tip into a foil tray with the butter, hot honey and sauce, toss to coat, and cover with foil.
  3. Cook covered another 60–90 minutes until a probe slides in with no fight, around 93–95°C.
  4. Uncover for 10–15 minutes so the sauce tightens, then rest 10 minutes before the crowd gets at them.

We don't see many returns — but if something isn't right, get in touch and we'll work through it together. Our full returns process applies to orders within Australia, returned within 30 days of purchase in their original, unopened condition, with proof of purchase.

We're not able to offer refunds for change of mind, so please choose carefully before checking out. Clearance and run-out items are sold as final sale, and gift cards can't be returned or refunded under any circumstances. If your order arrives damaged, faulty, or isn't what you ordered, contact us with a few photos and we'll arrange the best fix.
