Goan Cuisine's Chilli Lime Sambal is a glossy, sweet-hot lacquer built on red chillies, fresh lime and tamarind — equally at home brushed over ribs on the grill or spooned onto the side of the plate as a dunking condiment. Big flavour, dead easy.
Bright lime hits first, then a building red-chilli warmth rolls through the middle, grounded by sweet-sour tamarind and a savoury garlic-and-ginger base. It lands medium — enough heat to make it interesting, not so much it scares the table. Sweet, sharp, spicy and moreish all at once.
A glossy, red-flecked sambal — thick and spoonable, somewhere between a relish and a glaze, clinging beautifully to whatever you brush it on.
