Recipe: The Whole Shelf Smash Burger
Serves 2 · Prep 10 min · Cook 10 min
You'll need: 300g beef mince (don't go too lean — the fat's doing the work), 1–2 tsp REPUBLIC Garlic Butter rub, 2 burger buns, 2 slices cheese, REPUBLIC Smash Sauce, sliced pickles or onion (optional).
Method:
- Roll the mince into two loose balls — don't compact it, you want it to fall apart the second it hits the heat.
- Get a flat-top or heavy pan properly hot (smoking, not just warm). Drop the balls on, press flat and hard with a spatula for the first 10 seconds, then leave it alone.
- Season the exposed crust with Garlic Butter rub while it's still sizzling.
- Flip once the edges go lacy and dark — around 90 seconds — and add the cheese immediately so it melts into the crust.
- Build the burger and finish with a heavy stripe of Smash Sauce.
Safe cooking note: cook mince patties to a safe internal temperature of at least 71°C. Smash-thin patties this size will hit that well before the crust looks "done" — trust the thinness, not just the colour.
