🏴☠️ Darryl's Secret: Rump Cap with a Rendered Crown
Fat on top, flavour all the way through.
You'll need: 1kg rump cap (picanha), fat on; 2 tbsp Republic Signature Beef Rub; 1 tbsp oil.
Do this:
- Score the fat cap, rub the meat all over and rest uncovered in the fridge for 1 hour.
- Grill fat-side down over medium heat for 5 minutes to render, then sear the other sides.
- Move to indirect heat until it reads 54°C, about 20 minutes.
- Rest 10 minutes and slice against the grain.
