The flavour
Up front it's a clean salty hit off the Himalayan pink and everyday salt. The middle carries garlic, onion and black pepper with a whisper of mustard, and it finishes savoury and moreish thanks to a yeasty umami depth. Balanced, seasoned right through, never one-note.
How to cook with it
- Rub a scotch fillet 20 minutes before it hits a screaming pan or grill
- Toss chunky-cut spuds or pumpkin in oil and a generous shake, then roast hot
- Season chicken thighs before the barbie for a quick weeknight winner
