Jimmy Brisket

Meatstock Grand Champions. Built for brisket.

Jimmy Brisket is the competition BBQ team of pitmaster James "Jimmy" Cameron from Mount Evelyn in Melbourne's outer east: Meatstock Grand Champions, Houston ribs finalists, and one of Australia's teams for the first BBQ World Cup.

From the butcher's block to the comp circuit. Jimmy comes from a family of butchers and meat suppliers, so good beef was in the blood long before the smoke, and a visit to Big Boy BBQ lit the fire for American low and slow. In 2017 he got hooked watching BBQ Pitmasters, walked the grounds at Meatstock Melbourne and told his wife they'd be competing the following year. They were, and he took first place in brisket at his very first contest.

On the comp trail. Grand Champion at Meatstock Gippsland 2026, topping 23 teams by a single point. Ribs finalist at the Houston World's Championship Bar-B-Que Contest, 5th in 2024 and 4th in 2025. First in brisket at the Bellarine Smokeoff and the Grampians BBQ Festival in 2026, second in chicken at Meatstock Toowoomba 2026, and first in pork ribs and pork at the Low 'n' Slow Smoke Off in Gerogery in 2024. The Gippsland win punched the team's ticket to the inaugural BBQ World Cup in Las Vegas in April 2027, and Jimmy now sits on the board of the Australian Barbecue Alliance, which runs the Aussie comp circuit.

Real smoke, at your event. Off the comp field, Jimmy Brisket is a mobile American BBQ caterer across Melbourne for weddings, corporate events and backyard parties, built around 15-hour smoked Texas-style brisket, Tex Mex wings and pulled pork off the trailer offsets. The team also sells whole smoked Angus briskets and runs comp masterclasses for new teams. In Jimmy's words: "Here we cook proper American-style BBQ and show you how to do it at home."

The rub. Special Ops Beef Rub is the blend Jimmy built in-house for brisket: salt, black pepper and savoury spice for rich colour and a competition-quality bark, and just as good on beef ribs, steak, burgers and lamb. Made in Australia, it sits at 1 on our Sting Gauge, all savoury with no chilli burn.
