Wing Crush is Paula Stachyra's paperback of 100 chicken wing recipes for the grill, smoker or oven, from the Toronto cook behind Queen of the Grill and her #WingCrushWednesday posts. Every recipe adapts to whatever cooker you own, so it's as useful on a kettle as on a pellet grill.

One hundred ways to never cook boring wings again

Paula Stachyra built a loyal following with her weekly #WingCrushWednesday posts, and this book is the greatest-hits collection. It's pure, unapologetic wing obsession: saucy, crispy, rubbed, stuffed and crusted. The methods are straightforward, so the focus stays on flavour.

What's inside

Recipes work on any grill or smoker, and can even be cooked in the oven. The book moves through classic flavours, boozy glazes and over-the-top creations, with clear instructions for getting crisp skin every time.

Classics include Best Ever Buffalo, Kickin' Cajun and Sticky Teriyaki. The boozy lineup runs to Bloody Mary, Tequila Sunrise and Salted Caramel Whiskey wings, and the fun end of the book stuffs wings with jalapeño poppers and mac 'n' cheese, or crusts them in pretzels, popcorn and ramen.

Who it's for

Anyone who hosts the footy, cricket or a backyard party. Beginners will find the methods easy, and experienced cooks will find plenty of new flavour ideas. A great gift for the wing-obsessed mate.

The Rub Smuggler's Verdict

Darryl Rubb, The Rub Smuggler

Every grill needs a wing book, and this is the one with no off switch. A hundred recipes, all built around crisp skin first, which is the bit most people get wrong. Darryl's pick is the stuffed jalapeño popper wing, ridiculous in the best way. Get it and you'll be the house everyone turns up to on grand final day. Partner it with Backyard BBQ with Fire and Spice for Filipino and Cajun wing ideas, and Diva Q's Barbecue for the rest of the spread. Dry-season a batch with Kosmos Q Lemon Pepper Wing Dust. Careful, a tray this good tends to vanish before dinner.

🏴‍☠️ Darryl's Secret: Overnight Baking-Powder Crackle

Shatter-crisp skin without a deep fryer.

You'll need: 1kg wing pieces, 1 tbsp baking powder (not soda), 2 tsp salt, your favourite rub

Do this:

  1. Pat the wings very dry, then toss with baking powder, salt and rub.
  2. Lay them on a rack over a tray and leave uncovered in the fridge overnight.
  3. Cook hot and indirect (around 200°C) until the skin is blistered and golden.

Why it works: Baking powder raises the skin's pH so it browns faster, and the night in the fridge dries the surface so it crisps instead of steaming.
