Sweet Beef Rub is Big GC's "Everyday Perfect BBQ" take on a classic sweet beef seasoning — built for big bark and balanced, brisket-loving flavour. The sweetness is there to help the crust caramelise and darken, not to sugar-coat the beef, which is exactly why it works so well over a long, low cook.
The flavour
A gentle brown-sugar sweetness up front, backed by a savoury, peppery, garlicky base that keeps it firmly in beef territory. It caramelises into a deep, dark crust and finishes rich and rounded — the sort of rub that makes a brisket look as good as it tastes.
How to cook with it
- Coat a whole brisket the night before and smoke low and slow for a sweet, dark bark.
- Rub beef short ribs generously and cook long until the crust sets and glistens.
- Season a thick steak, sear hard and rest for a caramelised, savoury-sweet crust.
- Go two coats on big cuts for extra bark and colour.
