Bear & Burtons W Sauce

Get it on everything.

Long before it wore a label, Bear & Burton's W Sauce was a family Worcestershire brewed by the potful each winter in a St. Petersburg, Florida kitchen — vinegar, onions, tomatoes and spice left to marry for months, off a recipe pushing on a century old. In 2020, founder Burton handed a bottle to charter-captain mate Bear Holeman, who gave the only sensible response: "let's bottle this."

That's the range in a nutshell — small-batch, Florida-made Worcestershire-style sauces built bigger and bolder than the bottle you grew up with. Splash it into a steak marinade, stir it through a Caesar dressing, or drop a glug into a proper Bloody Mary.

Lead with the Fireshire, the range's best-seller, built on the same base sauce with a hit of mild Florida Datil pepper heat that builds without taking over. Round it out with Breakfast Sauce Too, a "verde" spin loaded with tomatillo, pear and more Datil pepper, built to turn eggs and bacon into an actual event.

The Datil pepper is the tell — a Florida heirloom chilli most Australians have never tasted, and it's what gives every bottle its own citrusy, slow-building heat instead of a straight vinegar burn. Every sauce is naturally gluten free, with nothing in the bottle that wasn't already in Burton's kitchen.

It's still the same family recipe, run past Suzie and George before a drop ever left Florida — small batch then, small batch now. Get it on everything.
