ACIDE is the work of Jon Bussell, who started on a single stall at Coburg Farmers Market and has been kicking doors down ever since. The idea is acid first: a bright, vinegary snap that cuts clean through fat and wakes up everything on the plate.
It's pickles and ferments with proper backbone: fresh Australian produce, real brine, spice blends ground in-house rather than sugar and food colouring. Where most jars turn up soft and sweet, this range stays sharp and alive — on a burger, through a salad, or beside a cheese board.
The Bread & Butter Zucchini is the best-seller and the jar that started it all: golden coins in apple cider vinegar with onion, mustard seed and turmeric. Close behind, the Jalapeño Onions bring a building heat for tacos and nachos, and the Dill Cucumber Chips stack thick crinkle-cut Kirby cucumbers loaded with dill, garlic and black pepper — cold, loud and crunchy.
The same in-house spice blends carry across the range, from the Korma blend behind the Curried Cauliflower to the chilli-crisp heat in the Giardiniera — all made in small batches in Melbourne.
