Foo Chilli Company started around one family's kitchen table in Melbourne, built by Ben — born in Singapore to Malaysian-Chinese parents — and Claire, who grew up in Melbourne with Anglo-Irish roots and a stint cooking in Italy.
The range is two crispy chilli oils, one for each side of that table. Ma Foo goes shallot, chilli flake, soy bean paste, star anise, cinnamon and a Sichuan peppercorn hum; Nonna Piccante goes capers, porcini, thyme, oregano and fennel through vegetable and olive oil. Both are built for a fried egg, a bowl of noodles, a plate of dumplings or a finished pizza, not just a garnish on the side.
Start with Ma Foo Chilli Oil for the Asian-leaning jar the family built first, then bring in Nonna Piccante for pasta, burrata and roast lamb nights — the pair are designed to sit side by side in the one pantry.
The names carry the story. Ma Foo is what the family calls Ben's mum, and Nonna Piccante — spicy grandma — is the nonna they invented so their Italian nights got the same crunch and complexity as their Asian ones. Two different culinary traditions, same obsession with proper crunch over the top rather than just heat.
