Flavour over heat. Always.

Danny Balboa's is a Melbourne hot sauce and spice rub outfit that started with one bottle for fight night. Back in 2015, Dan whipped up a batch of hot sauce for a mate coming over to watch the fights — the bottle didn't last the night, but the idea did, and Dan and Nat have built on it ever since, hand-making everything out of Brunswick.

Every hot sauce and spice rub is small-batch made on Australian ingredients and local suppliers the team actually knows — flavour first, heat second, on wings, tacos, burgers, brisket or whatever's hitting the grill. The whole range is vegan-friendly and gluten free.

Start with Fight Sauce, the smoked tomato and chipotle BBQ sauce mild enough to go on literally anything, then work up to Rehab, the reaper and habanero BBQ sauce for anyone who reckons "extreme heat" is a suggestion, not a warning. Snake Oil (jalapeno, pineapple and lime) and Juice Head (grape, Szechuan and habanero) round out a genuinely weird, genuinely good range.

Several bottles already carry Australian Food Awards medals, but what really sets Danny Balboa's apart sits behind the counter: a social enterprise providing real, flexible work for people who are neurodivergent or managing their mental health — not a marketing line, just how the kitchen runs.

Weird is welcome here, the good times are guaranteed, and the flavour was never up for debate. Flavour over heat. Always.
