Lawless is a lime and black pepper BBQ rub and seasoning from Canberra's Outlaw Barbecue, made for chicken, pork and seafood. It's the bright one in the brand's four-blend range — Outlaw started with a 2013 barbecue pilgrimage through Texas and Memphis and road-tested every blend on local cooks before launch. Zesty kaffir lime and cracked black pepper, built to wake up whatever's on the grill.

The flavour

Fresh citrus first — kaffir lime and lime oil — then a proper hit of cracked black pepper on the back end. A touch of sugar balances the zest, and it stays clean and bright rather than sour. Think a punchier lemon pepper with a South-East Asian lime twist.

How to cook with it

• Rub chicken wings or drumsticks and cook over direct heat until crisp.
• Season pork belly slices or chops before grilling.
• Dust fish fillets, prawns or calamari before a quick, hot cook.
• Shake it over roast pumpkin, corn or a bowl of hot chips.
• Rogue move: rim a margarita glass with it, or hit your nachos straight out of the oven.

A fine, pale blend with visible black pepper flecks. Use it as a rub before cooking, a seasoning during, or a finishing shake at the table.

Darryl's take: lime and pepper is the summer combo, full stop. Grill some wings with Lawless and toss them in Danny Balboas Snake Oil for a green, tangy kick. Fish tacos? A drizzle of Fancy Hanks Jalapeno & Peach brings the sweet heat Lawless leaves out. Tip: it's lower in salt than most rubs — season generously.
