- Carolina Dirt goes on pork shoulder or ribs before a low and slow smoke; the sugar builds a mahogany bark.
- Q-Rub is a salt, pepper and garlic all-rounder. Season a thick steak about 45 minutes ahead.
- Sauces go on late: brush Smoky or Gold over ribs and chicken in the last 20 minutes, and toss Carolina through pulled pork. Every product page shows its Hub Heat rating out of 11.
