Brands to Watch: Croix Valley Sails In From Wisconsin, One Rub to Rule Them All

Today I made port with a manifest heavier than usual — an entire container's worth of shakers, all the way from a place called Hudson, Wisconsin, that I'd wager most of the crew couldn't find on a map. Nine rubs and boosters, not one of them paid customs. Let's go through the cargo.

A new brand landing in the hold is always worth a proper look before it goes on the shelf — that's the whole point of the deep-dive, not just the diary entry. Croix Valley is a Wisconsin-based BBQ house that's been quietly stacking up hardware at competition cookoffs in the US, and their full range of dry rubs and "barbecue boosters" has just come aboard, ACTIVE and up for pre-order while the first shipment clears the water.

The headline rub: One Rub

Start with the one that does the talking: Croix Valley One Rub. It's their flagship all-purpose blend, built for beef, chicken and pork alike, and pitched as balanced rather than fiery — sweetness, salt and umami in one shaker rather than a wall of heat. Straight from the brand's own product page: it's confirmed vegan and gluten-free, and — credit where it's due for saying so plainly — it does contain added MSG, there for the umami rather than hidden from it. No receipts, only recipes: if a brand tells you straight what's in the shaker, that's a brand worth stocking.

The rest of the range leans the same way. The All Meat BBQ Dry Rub is their genuine all-rounder — no heat, all savoury — while regional blends (Carolina, Kansas City, Memphis, St. Louis) each chase a different American house style. Every rub in the range is confirmed vegan and gluten-free on the brand's own site; as always, that's the brand's claim and this crew's verification against it — the physical label still has the final word, so check it before you rely on it for someone with an allergy or a dietary need.

The Barbecue Boosters — the sleeper hit of the manifest

The bit I didn't expect to like this much: Croix Valley's "boosters" — smaller all-purpose seasoning shakers built to live on the bench, not just the smoker. The Garlic Barbecue Booster is exactly what it sounds like, and the brand's own listing points it at popcorn and roast potatoes as readily as a steak — which brings us to this week's Secret.

Recipe: One Rub Reverse-Sear Beef, the Wisconsin Way

Serves: 2 · Prep: 10 min (plus 1 hr dry-brine) · Cook: 40 min · Total: ~50 min active

Gear: oven or smoker, wire rack, cast-iron pan or hot grill grate, instant-read thermometer.

Ingredients:

  • 2 thick-cut scotch fillet or sirloin steaks (approx. 300g each)
  • 1–2 tbsp Croix Valley One Rub
  • 1 tbsp neutral oil
  • A knob of butter, for basting

Method:

  1. Season the steaks generously with One Rub on all sides, place on a wire rack and rest, uncovered, in the fridge for at least an hour — this is a dry-brine and it's doing real work on the crust.
  2. Bring the steaks to room temperature, then cook low and slow in a 120°C oven (or the indirect side of a smoker) until the internal temperature reads 5–8°C below your target finish — around 45–48°C for medium-rare.
  3. Rest 5 minutes, then sear hard in a screaming-hot cast-iron pan or over direct coals, basting with the butter, until a deep crust forms — about 60–90 seconds a side.
  4. Rest again, briefly, then slice against the grain.

Darryl's tip: because One Rub is balanced rather than sugar-heavy, it won't scorch bitter on that final hard sear — which is exactly why a competition-tuned rub earns its stripes on the reverse sear.

The Smuggler's Secret

Off the books, and straight from the maker's own playbook: the Garlic Barbecue Booster isn't just a meat seasoning. A shake through hot popcorn, or over roast potatoes in the last 10 minutes, turns a plain snack into something people ask about. Sometimes the best contraband doesn't go near the smoker at all.
