Rustic, aromatic and completely heat-free, it's built for anyone who wants big Mediterranean flavour without a single chilli in sight.

The flavour

Rustic Mediterranean herbs lead — rosemary, oregano and marjoram — over a garlicky, paprika-warmed base. Sumac brings a bright, lemony tang, and a whisper of cinnamon and nutmeg rounds it into something gently exotic. No heat, all aroma.

How to cook with it

• Rub it into chicken thighs and grill for a backyard gyros — pile into warm pita with tzatziki.
• Massage it into a butterflied lamb leg the night before, then roast or spit-cook.
