🏴☠️ Darryl's Secret: Double-Cooked Chicken Salt Chips
Chippy-shop chips without leaving the house.
You'll need: 1kg floury potatoes, cut into thick chips; Oil, for deep-frying; 2 tsp Misty Gully Competition Chicken Salt.
Do this:
- Soak the chips in cold water for 30 minutes, then dry them very well.
- Fry at 140°C for 6 to 8 minutes until soft but still pale. Drain and cool for 20 minutes.
- Fry again at 190°C for 3 to 4 minutes until golden and crisp.
- Toss straight away in a bowl with the chicken salt so it sticks.
Why it works: The first fry cooks the inside; the second builds the crunch the salt clings to.
