Smoky Pastures runs on comp trailer discipline. Matthew Knowles and Tom Damin started the outfit in 2018, trading backyard spit roasts for a real seat on the Australian BBQ Alliance circuit, with Damin calling the shots as team captain and pitmaster out of Adelaide, South Australia.
Everything that came off that pit got bottled into a proper range of handcrafted seasoning rubs and a glaze sauce, built to squeeze real flavour out of beef, lamb, pork, chicken and game, whether you're running a low and slow smoker or working the flat-top griddle.
Top Shelf is the everyday all-purpose shaker for beef, pork and burgers, Sweet Dreams sweetens up chicken, pork and fish, Game On is built for lamb, game and kangaroo, and Tik Tik Boom brings tandoori-style heat to chicken and lamb. The Sweet and Sour Sauce glazes ribs and wings, and Risk It — true to the team's own motto — is the everyday beef and lamb rub for when the brisket's on the line.
They back that talk up on the judges' table too, cooking Australian BBQ Alliance events including Up In Smoke at the Adelaide Showground and banking strong scores across chicken, lamb, pork, brisket and pork ribs, then filming the campaign for a YouTube channel with a genuine following among backyard cooks living vicariously through the comp trailer.
Comp-tested, paddock-honest, no shortcuts. Risk it for the brisket.
