This is the Texas-style rub for cooks who chase a black, peppery bark and want their beef to taste unapologetically of beef. There's no sweetness to hide behind — just coarse pepper, clean salt and savoury spice built to armour a brisket. Developed by the award-winning Firehouse Barbecue competition team, it's a war ration for brisket, steak and beef ribs.
Coarse black pepper leads from the front, backed by clean salt and a low, earthy spice hum through the middle. There's no sugar-sweet finish to soften it — the savoury, almost mineral backbone lets the beef do the talking, while a whisper of activated charcoal deepens the colour of the crust as it sets.
A coarse, dark grind — cracked pepper and spice flecked through with the matte black of activated charcoal. It grips oiled meat and builds a genuine crust rather than dissolving away on the cook.

No — it's a savoury, pepper-forward rub with no chilli heat. It's built for deep beef flavour and a dark bark, not burn.

No added MSG. The blend is pepper, salt, spices, sugar and activated charcoal.
What is the activated charcoal for?
It is part of what gives the rub and the finished bark their deep, dark colour.
Which cuts suit it best?
Brisket, beef ribs and steak love it, but it earns its place on any serious beef cook.
We offer refunds and/or exchanges, providing a request for return is received within 30 days of your order being delivered. Your item must be in its original packaging and in the same condition that you received it.
The return shipping costs will be the responsibility of you, the customer. For domestic orders (AUS & USA) a prepaid shipping label can be provided, with the associated costs being deducted from the refunded amount. International (Asia) returns will need to be arranged by the customer, and will require a tracking number.
Any refund or exchange will only be issued once the original item has been shipped back to us.
In the unlikely event you receive a defective or damaged item, we offer you the choice of a full refund or a replacement. We will cover all return shipping costs.
