🏴‍☠️ Darryl's Secret: Reverse-Seared Hickory Steak

Slow in, hot out, nobody asks questions.

You'll need: 2 thick-cut scotch fillets (about 4cm); 1 tbsp Hickory Smoked SPG per steak; 1 tbsp oil.

Do this:

  1. Season the steaks all over with Hickory Smoked SPG and rest them on a rack for 30 minutes.
  2. Cook at 120°C in the smoker or oven until the centre hits 50°C, about 45 minutes.
  3. Sear on a ripping-hot oiled grill for 1 minute a side.
  4. Rest 5 minutes and slice against the grain.
