The flavour

Brown sugar sweetness (50%) leads, smooth bourbon essence and warming cumin, paprika and garlic follow. Rich, mellow and moreish, with no real heat.

🏴‍☠️ Darryl's Secret: Bourbon Belly Burnt Ends

Pork lollies for grown-ups.

You'll need: 1.5kg pork belly, skin off, cut into 4cm cubes; 3 tbsp Brown Sugar Bourbon; 2 tbsp butter; ¼ cup honey.

Do this:

  1. Coat the cubes in Brown Sugar Bourbon and smoke at 120°C for 3 hours.
  2. Move to a tray with the butter and honey, cover with foil and cook another hour until tender (around 93°C).
  3. Uncover, toss in the juices and cook 15 minutes more so they go sticky.
  4. Rest 10 minutes; they're molten inside.
