Recipe: Champions' Blend Sticky Ribs
Serves 4 · Prep 15 min · Cook 4.5 hrs · Total 5 hrs
Gear: Smoker or kettle set up for indirect heat at 120–135°C, a basting brush.
Ingredients:
- 2 racks pork ribs, membrane removed
- 2–3 tbsp of your favourite pork rub (unseasoned is fine — Champions' Blend carries plenty of flavour on its own)
- 1 cup Blues Hog Champions' Blend BBQ Sauce, divided
- 2 tbsp apple juice, for the spritz
Method:
- Season the ribs and let them sit 30 minutes at room temp.
- Smoke indirect at 120–135°C for around 3 hours, spritzing with apple juice every 45 minutes to keep the surface from drying out.
- Wrap in foil with a splash of Champions' Blend for the last 60–90 minutes, cooking until the meat bends and cracks when lifted — that's the tell, not the clock.
- Unwrap, brush generously with the remaining sauce, and return to the heat uncovered for 15–20 minutes to set the glaze. Watch it — the sugar in any BBQ sauce burns fast on direct heat.
- Rest 10 minutes before slicing between the bones.
