Today I thought we'd hooked something enormous off the back of the ute — turned out to be a cardboard box that had slid clean across the tray on the drive home. Inside it, not treasure exactly, but close: five full-size jars and a sauce, every one of them aimed at the same bird.

Chicken is the most-cooked meat in the country, and by Darryl's reckoning, the most quietly ruined. Not because it's hard — because most of us reach for whatever's closest and hope for the best. It comes out pale, it comes out bland, and everyone's too polite to say so. The Chicken Jockey box, just landed on the Rub Hub shelf, is built to fix exactly that: four seasonings that each do a different job on poultry, plus the sticky sauce that finishes it. Sailing through the cargo

Then Smokes Seasoning Pork-Poultry BBQ Rub — the colour man. Turmeric and a whisper of anise lay down that gorgeous deep golden skin with a friendly kick on the back end (about a 4 out of 10 — nothing that'll scare the kids off their dinner).

Coast n Smoke Winki-POP Dust comes next — the wing specialist, sweet-smoky with ancho and chipotle, thyme and oregano, and an Australian Barbecue Rub Awards finalist in the chicken category two years running.

And closing out the manifest, Atomic Chicken Honey Mango BBQ Sauce — ripe mango and honey over a classic base, the one that goes on last, brushed over hot wings so it lacquers instead of scorching.

Deep-dive: what's actually in the box

Verified against each brand's own listing and label declaration:

  • Charcoal Chicken: salt, sugar, herbs, rice flour, dehydrated vegetable, yeast extract, spice extract (160c), rice bran oil, anti-caking agent (551). Gluten-friendly and vegan-friendly by the listed ingredients, though it may carry traces — made in Australia.
  • Chicken Chieftain: sugar, salt, spices, flavour enhancer (621). Contains added MSG, and is made on shared equipment with soy, sesame, gluten, peanuts and tree nuts — made in Australia.
  • Pork-Poultry: spices, salt, sugars, sea salt, monosodium glutamate, citric acid, dehydrated onion, soybean, canola oil, vinegar, silicon dioxide, garlic powder, caramel, tamarind extract, natural flavour, ethoxyquin. Contains soy; may carry traces of gluten and peanut — crafted in Alberta, Canada, blended here in Australia.
  • Winki-POP Dust: brown sugar, salt, ancho chilli, smoked paprika, onion, raw sugar, chipotle, garlic, cumin, paprika, mustard powder, black pepper, thyme, oregano. No gluten detected during testing, vegan, no dairy, no MSG — but does contain mustard. Made in Victoria.
  • Honey Mango BBQ Sauce: water, sugar, honey, tomato, mango, onion, apple, Worcestershire, vinegar, mustard, molasses, garlic, ginger, salt, paprika, starch, jalapeño, xanthan gum, pepper, clove, cinnamon, nutmeg. Contains mustard and Worcestershire (typically anchovy-derived) — not vegan or vegetarian. Made in Australia.

Across the box as a whole: soy, mustard, added MSG and Worcestershire show up somewhere, and nothing in it carries a certified gluten-free claim — so if you're cooking for someone with an allergy, check every physical label before it goes anywhere near the bird.

The weekend plan

Friday night: thighs and Marylands dusted with Chicken Chieftain, tray-roasted with spuds in the same seasoning.
Saturday: wings — dust heavy with Winki-POP, grill hot until the skin blisters, then toss through warmed Honey Mango sauce off the heat, never on it.
Sunday: the whole bird. Charcoal Chicken under the skin and over it, roasted or spatchcocked until the skin cracks.

Recipe: The Sunday Charcoal-Shop Roast Chicken

Serves 4 · Prep 15 min · Cook 75 min · Total 1 hr 30 min

Method:

  1. Pat the chicken dry. Loosen the skin over the breast and thighs and work the seasoning under it as well as over the whole surface — this is the step most people skip, and it's the one that actually seasons the meat instead of just the skin.
  2. Oil the skin, then roast or smoke at 200°C (or 180°C indirect on the smoker) for 60–75 minutes, until the thickest part of the thigh reads 74°C.
  3. Rest 10 minutes before carving — the skin stays crisp, the juices settle back in.

Darryl's tip: spatchcocking (cutting out the backbone and flattening the bird) is the single easiest way to get even skin and faster, more reliable cooking — no fancy gear required, just kitchen shears.

The Smuggler's Secret

Warm the Pork-Poultry rub's turmeric in a splash of oil before it touches the chook — thirty seconds in a warm pan blooms the spice, concentrates that golden colour, and rounds off any raw turmeric bite. Do this before you even season the bird and the skin comes out deeper gold than the jar alone will ever manage.
