Dark bark, deep coffee, no apologies.

You'll need: 2kg beef short ribs (3-bone plate); 2 tbsp yellow mustard; 3 tbsp Chipotle & Espresso.

Do this:

1. Smear the ribs with mustard and coat all over with Chipotle & Espresso.
2. Smoke at 125°C for 7–8 hours, until the bark is dark and a probe slides in like butter (around 95°C).
3. Rest wrapped in a towel for 45 minutes before slicing between the bones.

Why it works: Coffee and smoked paprika build a dark, savoury crust that stands up to a long cook.
