Slow-cooked until the onions give up and turn sticky and sweet, then built out with brown sugar, balsamic, rosemary and a hit of ginger and mustard seed. Bronze medal at the Sydney Royal Fine Food Awards 2025 — earned the hard way, in the pot.
This is a steak relish first and a burger relish close second — pile it on a rump straight off the grill, or let it melt into a beef burger.
In the jar: deep brown, glossy and sticky, soft caramelised onion right through with flecks of rosemary and mustard seed.
