This is the marinade that started Little Brixton — a tribute to founder Richard's family's Jamaican heritage, born the summer he moved from London to Melbourne and couldn't find a decent jerk marinade anywhere. So he made his own. Lucky us.

The flavour

Sweet and smoky with a hint of habanero chilli — that classic jerk one-two of warm allspice and thyme up front, ginger and garlic through the middle, and a slow, friendly habanero heat on the finish. Real jerk balance: flavour first, fire second.

How to cook with it

• Marinate chicken (the classic) for at least 30 minutes — overnight is better
• Slather over pork shoulder or ribs before a slow cook
• Toss through prawns or firm fish before the grill
• Coat veg and halloumi for the barbecue
