Lamb Layup is Aaron Palmer's dedicated lamb and game rub — a herby, tangy blend spiked with sumac that cuts the richness of lamb and lifts venison, rabbit and other game. Backyard roast or competition rack, it is built for the meats that deserve more than salt and pepper.

The flavour

Bright sumac tang and garlic lead, herbs and pepper fill the middle, and a savoury, faintly citrusy finish cuts through fatty lamb. It is fresh and Mediterranean-leaning rather than sweet or smoky — exactly what lamb wants.

How to cook with it

  • Rub a rack or shoulder and roast, then rest well before carving.
  • Season lamb chops or cutlets before a hot, fast grill.
  • Work it into mince for koftas or lamb burgers.
  • Dust venison, rabbit or other game before slow-cooking.
  • Try a pinch on roast pumpkin or eggplant for a veg side.
