Small-batch relish and vinaigrette from Tamco — a Northland, New Zealand family business built entirely around one rare fruit, the tamarillo. Robin and Heather Nitschke spent five years perfecting the recipes before launching from Whangarei in 2014, picking up NZ National Food Awards and NZ Artisan Food Awards gold. Fewer than thirty commercial tamarillo growers remain in New Zealand — tangy, glass-packed, no artificial colours or preservatives.
Spoon the relish onto a cheeseboard or next to cold cuts, fold it through a meatloaf, or use it anywhere you'd reach for tomato relish on a steak or snags off the barbie. The vinaigrette works as a proper dressing over salads or drizzled over grilled haloumi and roast vegetables — enough character to finish a dish on its own, no oil required.
